“Slap Ya Mama” Blackened Catfish Filets

Ingredients:
- 6 Catfish Filets
- 1 Stick of butter (8 Tbsp.)
- ¼ Cup White Wine
- Juice of One Lemon
- “Slap Ya Mama” White Pepper Blend Seasoning to Taste
- “Slap Ya Mama” Cajun Pepper Sauce to Taste
Directions:
Wash your filets in cool water and set aside.
Butter Mixture: Melt butter in a bowl and add the juice of one lemon and mix well.
Dip your filets in the butter mixture then generously “slap em’” with “Slap Ya Mama” Cajun seasoning on both sides. Heat a black iron skillet or sauce pan until it’s very hot. Place the filets in the skillet and cook for about 2 minutes on each side while moving the filets around to prevent sticking. Remove filets from skillet and remove the skillet from the burner. While your skillet is still hot, pour the butter mixture and the white wine into the skillet and mix well.
Then pour the mixture over the filets and serve.

Chicken Parmesan
Ingredients:
- 4 boneless chicken breast
- 1 egg
- 1/2 cup milk
- 2 to 3 tablespoons olive oil
- 8 slices mozzarella cheese
- 1 16 oz jar of Spaghetti Sauce
- Parmesan Cheese
- Slap Ya Mama White Pepper Blend to taste
Directions:
Start by making an egg wash by whisking together egg and milk. Season egg wash and meat with Slap Ya Mama Seasoning. Now you can give your chicken a good dunk in the wash. Now take your bread crumbs and put in a large bowl. Take your chicken out the wash and batter with bread crumbs. Heat oil in skillet on med high heat and add chicken. Cook until golden then turn chicken and cook other side until golden. Now place chicken in baking dish. Put your sliced mozzarella cheese on each breast. You may put 2 slices on each. Now pour your jar of spaghetti sauce on chicken. Next sprinkle with Parmesan cheese and bake in a 350 degree oven for about 30 minutes. Just until bubbly. Serves 4. Goes great with noodles and garlic bread.

Slap Ya Mama Chili

Ingredients:
- 4lbs 1/2 Cubed Beef
- 2 diced onions
- 2 8oz cans tomato sauce
- Slap Ya Mama Cajun Seasoning White Pepper Blend to taste
- 1/2 cup chili powder
- 2 tsp salt
- 4 tsp. ground cumin
- 1 tsp Slap Ya Mama Cajun Pepper Sauce
- 1 can of Beer
- 2 tsp Vegetable Oil
- 1 can tomato paste
Direction:
Sear meat in covered pan with Vegetable oil. Add Onions, tomato sauce, and garlic powder,cover and simmer for 45 minutes stirring occasionally. Mix in remaining ingredients including Slap Ya Mama Seasoning and Pepper Sauce and simmer for 2 hours. Stir Occasionally.
Add more beer as needed and in small amounts add tomato paste if chili needs thickening. serve with crackers
