Andouille is a spiced, heavily smoked pork sausage using pork, chitterlings, pepper, onions, wine, and seasonings distinguished in some varieties by its use of the entire gastrointestinal system of the pig. for example, traditional French andouille is composed primarily of the intestines and stomach. Sausage usually consist of ground meat (Pork, Chicken or Beef etc...), animal fat, salt, and spices, and sometimes other ingredients such as herbs, sometimes packed in a casing.
